This study analyzes the economic effect if the Oregon school system spent an additional $0.07 per school meal to purchase local foods for the lunch line. Beyond economic effects, researchers also explored the potential public health benefits of bringing more local products into the lunchroom. The results found the increase purchasing of local foods helped to grow all aspects of the local food value chain including direct output, value added, and employment. The resulting tax revenue from additional local business more than offset the costs incurred to procure local foods.
